Ideas for buffet for 16-18 people

My husband's collegues plus a visiting teacher from the States are coming to our house for dinner. I thought Scottish/British theme would be tasty :)

Any inspiring thoughts apart from haggis and clapshot. I'm an ulster girl living in Scotland and still not got a the hang of haggis!

Sausages on sticks.
Pickled onions
Mini marmite sarnies
Potato salad
ritz crackers with stilton
Water biscuits with cheddar
Any proper english crackers with any proper brit cheese in fact.
Mini trifles
Sausage rolls
scotch eggs - I realise that they probably aren't properly scottish but.............
Gala pie
I think I am just making a list of what I fancy eating and what I can't easily get.

I've often served a whole poached Scottish salmon, dressed with thin cucumber slices as a buffet centrepiece. Same with a glazed Wiltshire Ham. Serve with the usual salads but British it up with famous condiments like English Mustard, pickles and plenty of interesting relishes. (Nowhere else does relishes like us) I'd also hand round mini oatcakes with regional cheeses, curried egg or smoked fish on top and those little Melton Mowbray pork pies. And we're particularly famous for our puddings, of course. Traditional lovelies like Bakewell Pudding, Treacle Tart, Sherry Trifle, Gooseberry Fool, Strawberry Shortcake or Bramley Apple Pie etc. in bite-size proportions served with a dollop of custard would go down a storm.

Kreecher, that is a very Scottish diet :-) plenty of salt and saturated fat ;-)

Chil, love poached salmon idea, would be a lovely change.
