Best tortilla ever...

I need a recipe for a really nice tortilla. I went to a picnic where the grandma of one of the kids sent a home-made one. She is Spanish, so I suppose it must have been authentic. Whenever I try, it just tastes like a fat omelette with spuds in it. I have announced that I am bringing one to the next picnic...

My FIL is spanish & makes the best tortilla ever. He has taught me all his secrets & mine still don't turn out like his

I make up for it by not allowing him to visit without bringing one Grin

2 most important points were to use waxy (I think) potatoes and most importantly to deep fry the potatoes first.

I agree with loony. I fry off onions and small slices of waxy potatoes with a little minced garlic in LOTS of olive oil. I almost boil them gently in it for 20 mins or until the potato is soft. Then spoon that out (still hot) into your beaten eggs and make sure you season it well. Tip out the excess oil, bring it back up to a good temperature then pour in the egg/potato mix. It should almost souffle up at the sides. Use a spoon to agitate the middle a little and turn down the heat to medium. When it's almost cooked through, but you've still got a bit of wobble put a flat board or plate on the frying pan, hold on tight, flip it, then slide the tortilla back into the pan. Cook for a minute or two and take out. I put it on kitchen paper to take off any excess oil. Delish.

How do you know if your potatoes are waxy then?

Get something like Charlottes, they are waxy.
