can i leave it out ready to pop in the oven in an hour or two? it wont have time to get cool enough to go in the fridge will it?

baby asleep, makes sense to get it done before he wakes and starts yelling.

the ragu is simmering away as we speak...

i never know if i'm going to kill us...

I have no idea if you SHOULD let it cool, but I have just done exactly what you have described and it is what I have always done - and no food poisoning yet!

Infact I have two warmish lasagnes sitting on my kitchen worktop waiting to be baked in an hour and a half.
