oooh, spooky. I made this tonight.

This is how I made it but not sure if it is official recipe. This made enough for about 3 adults.

1 small pumpkin, peeled and deseeded.
1 onion
50g butter
couple of carrots or sweet potatoes (optional)
Pint of chicken stock
Some milk (half a pint)

Fry onion v. gently in butter in a heavy base pan. Add chopped up pumpkin and any other veggies you want shot of and chicken stock. Hubble away for 15-20 mins.

Blend in food processor or blender. Put back in pot add milk, some salt and pepper. Reheat gently, don't boil.

Stir in chopped basil and double cream when you serve it if you are organised enough to have stuff like that in the house.

It was most yummy. Even DH liked it and he hates anything in the squash family

Not really that spooky since is halloween I spose. Mind you actually I made from Butternut squash but have done it with pumpkin before.

umm, chop onion before frying, should have mentioned that.

does it have to be vegetarian?

some chopped smokey bacon added at the onion frying stage and some finely chopped spring onions and a swirl of creme fraiche to garnish really bring out the pumpkin flavour

or if you are really feeling wifey, roast the pumpkin first

Dh says it can be bland a teaspoon or so of surry powder can liven it up a bit.

I put some fennel in and it made it taste much less bland

coriander is also good
