Help! DH has just announced he wants chicken pie for tea!

I have no idea where to start!

I have chicken, and I can make shortcrust pastry, but what about the filling? He's expecting a creamy sauce, would a normal white sauce do? With some chicken friendly herbs??

Why did i offer to make him anything he wants?????

white sauce, or dash of white wine, bit of stock, double cream and some tarrogan (that's not the right spelling is it?)

Roast the chicken. Fry leeks and mushrooms (other veg is available) in butter, add 1tbsp flour, fry for a few minutes, pour on about half a pint of milk to make a white sauce. May need a bit more or a bit less, I cook by sight not measurement. Add a dollop of creme fraiche or cream. Season. Add chicken. Put in a dish with pastry on the top. Into the oven until pastry is cooked.

Big favourite in our house.

Right! Currently bubbling in a pot is Chicken in white wine and stock, no tarragon at the local shop so substituted for Thyme, salt, pepper etc. Will let it simmer for a while then I'll add creme fraiche before topping with pastry and sticking it in the oven.

Hopefully, it should be ok! Will report back. I have the take away menu on standby!!

obviously too late now, but if you need to do again i make the base with a couple of asparagus instant soup mixes and use ready made puff pastry for top.

i use 2 x tins of campbells condensed chicken soup for sauce , throw the roasted chicken in to it, throw in half a bag of defrosted frozen mixed veg, put in ready made pastry, oven for 30 mins - et voila - pie Smile

I know Ali, but he's been a rock this week with my grandma and everything!! I made enough to freeze half for when the baby arrives too! :o

I use Campbell condensed mushroom soup when doing Chicken and Mushroom Pie.
