I am making a chocolate victoria sandwhich for my little one's birthday...when I have made regular butter icing in the past with cocoa to make in chocolate it comes out a light brown colour and doesn't look very chocolate to me? How can I make a darker brown butter icing? Can I melt chocolate and leave it to cool a bit and stir that in or would that wreck the butter icing?
Please help!
(Love butter icing on cake but i doesn't look very good when I just stir in cocoa which has been dissolved in a bit of boiling water into the butter icing)

you could do ganache instead - I did it recently and it's much nicer, more chocolatey and darker. recipe here
if it's a kid cake though it might be too chocolately - some kids don;t like it too dark - though I don;t see why you couldn't make it with milk chocolate

Buy a tub of Betty Crocker choc fudge icing. I once spent ages slaving over hot pans to make chocolate fudge icing and it tasted exactly the same as betty Crocker's. It is bloody gorgeous.

Yes, in answer to your question, you can stir in melted chocolate.

I second the Betty Crocker comment though. It's delicious, and I bake a lot with everything made from scratch.
