Tinned apricots

I have been writing my shopping list and have discovered 4 tins of canned apricots in the can cupboard (bought mistakenly thinking they were peaches). We are not keen on them just as they are. Any good recipes out there which would use them up. I should mention I am a vegetarian.

i usually eat them in porridge or with meringue nests. But you could google for a tagine recipe. I dont have one but lots of tagines have apricots or prunes in them.

Thank you - I will go and have a hunt.

Nice with chocolate custard - very 1950's pud but still nice

Oooh! That might make ds eat them. He is woefully underweight so allowed his body weight (which admittedly is not impressive) in chocolate anything. Thank you. Smile

My mum uses them in an apricot upside down cake, or mixed with whipped cream and some chocolate flakes in a dessert. I did a recipe from Cbeebies with them on puff pastry as a kind of tart (with jam).

Or I could buy them off you. DD adores them, they are her 'special treat' straight from the tin! Wink

Thanks penona - cake is always a good option ;0)
