Fork Buffet advice needed

[Lasvegas]

I have 40 guests for a buffet party. There will only be a few seats so I intended to order only food that could be eaten with fingers or a fork. But now realised that I am serving cold meats. Can people eat this with fingers/fork? Or should I also provide knives? Even though it is impossible for someone to hold plate & eat standing with a knive and fork.

Put the cold meat in rolls?

Cut slices into smaller strips, roll up and put on a cocktail stick?
