Ideas for supper tonight - chicken breasts

Hello all wise Mnetters!

I am looking for ideas for supper tonight as DP has vetoed Morrocan.....
Sooo, I have chicken breasts, new potatoes, spinach, low fat creme fraiche. I am looking for something simple and tasty. I can cook well but am useless without a recipe and have spent the last half hour trawling good food with no inspiration! So please help me out!

This is what I would do and is based on the chicken pie recipe from jamie's 30 minute meals:
4 chicken breasts
knob of butter bunch of spring onions
150g button mushrooms or swap this for your spinach
1 heaped tbsp plain flour
2 tsp english mustard
1 heaped tbsp creme fraiche
300ml chicken stock (i used 150 chicken stock & 150 white wine)
few sprigs of fresh thyme

slice chicken into strips
fry in a large pan with knob of butter & a splash of olive oil for 3 mins
add sliced spring onions and the flour and stir
add the mustard, creme fraiche and stock (& wine if using) and stir well
pick of fthe thyme leaves and add to the pan
put in the spinach
leave to simmer for another 5 mins or until the chicken is cooked.
season to taste with salt & pepper.

Jamie goes on to put a pre-made sheet of puff pasty on top and put in the oven for 15 mins. I have tried this and it's lovely. alternatively, you could serve the chicken part with new potatoes. wouldbe lovely! in fact, think i'll make the same tonight!

Oh yum you are amazing that's it! thats what I will do, thank you so much! I even looked at 30 min meals this morning and didn't even look at that recipe because I didn't want pie. Yum, can't wait!

Or chicken paprika?

for 4 people:

Finely slice two large onions, and finely chop 4 cloves of garlic
Fry gently in olive oil (and a bit of butter if you like) for about 45 minutes - you're looking to get them really soft and gently caramelised

Then add two tablespoons of paprika, stir in, and then turn up the heat and add your chicken breasts (whole).

Season with salt/pepper and some herbs - anything you like (oregano works well)

Fry a little bit, then turn the heat down and cook gently for around 20 minutes, till the chicken is cooked through.

You may need to add a little bit of water to stop it sticking.

Serve each chicken breast with a dollop of the onion mixture on top, with a spoonful of creme fraiche/sour cream/yoghurt on top.

Goes well with rice and a green salad.
