Get to know your pulses! I'm a massive fan of beans, chickpeas, lentils etc. because they're dirt-cheap and pretty nutritious. Also remarkably versatile. Favourites would include
Beanburgers... mashed beans/chickpeas with grated onion/carrot, some oats, chilli flakes, herbs and I hold them together with an egg but you could use a little soy-milk to moisten. Fry both sides in a little oil, serve with salad and pitta bread
Bean casseroles/stews.... A tomato & bean base with a selection of other vegetables such as aubergines, courgettes etc. As well as adding chilli peppers for a standard 'Chilli non Carne', you can spruce it all up with a topping of mashed potato/sweet potato or an oatmeal crumble. Lovely
Indian dishes.... Indians positively thrive on versions of 'dal', almost all are vegan, and there are hundreds of recipes for lovely ones using different shape/size lentils and split peas. Flavoured with indian spices and usually some ginger and garlic. Very simple and tasty served with plain rice and chapati.
Also 'Stuffed stuff!'.... Extra big mushrooms, peppers or tomatoes, hollowed out a little and filled with various grains like quinoa, cous-cous or brown rice, moistened with oil and avocado, flavoured with chopped herbs and spices, topped off with vegan cheese and sprinkled with chopped nuts. Delicious.
