Pork Mince

Got some pork mince on offer the other day . But really not sure what to make with it .
Need to feed dh and myself , and also 2 plain food eating dcs .
Any suggestions ?

half and half with beef mince makes a delicious lasagne.

Can do most things that you'd do with beef TBH - meatballs, bolognaise...

Not very inspiring, I know Grin.

Meatballs. half pork mince, half beef mince (250g of each), an egg, a slice of white bread softened in milk, parsley (or whatever herbs you got handy). You can also add a tea spoon of mustard.
Roll in flour and fry before adding to a tomato sauce (ie: softened onions+ tins of chopped toms)

Or bolognese sauce for spaghettis or lasagnas, again, mixing beef and pork.

I made Delia's American Meatloaf yesterday with 1lb minced pork and 1lb minced beef

Rest of the recipe was a couple of onions, minced up with garlic, parsley and thyme. 3oz white breadcrumbs (I used oats) soaked in 3 tablespoons of milk. Some worcester sauce and mustard to flavour. Combine in a food processor, then place it all in a 2lb loaf tin, cover with streaky bacon slices on top and foil. Place the filled loaf tin in a shallow roasting tin with a good inch of boiling water and bake for 2 hours at Gas 2 or 150C. Leave in the tin for 1/2 hour before turning out and slicing. Great with cumberland sauce or ketchup!

My DS thought this was the best thing ever... :)

Fry with v finely diced onion or spring onion, maybe stick of celery. Add a hint of ginger, garlic, soy sauce, black pepper all just to mildly flavour if kids not keen. Fry until dry. When almost cooked add a tablespoon of 'bashed up' unsalted nuts eg cashews, peanuts. Serve with whole iceberg lettuce leaves to use as wraps. My very fussy nephews convinced by fact eat with fingers & no visible veggies Wink
