Using up left over pork...help please

I should know the answer to this but wnat to check.

Got half a leg of pork left and can't bear the idea of doing another roast dinner tomorrow. I also have a pile of roast spuds and parsnips. I wondered about rissoles- putting all in food processor and whizzing up then frying etc?

I know it's fine touse beef for these- just like shepherds pie etc- but is pork okay if well heated through?

I am sure it would be fine, but seems a pity.

How about Hugh Fearnley W's tonnata? Slices of cold pork with a mix of mayonnaise, tuna and capers - delicious!

Also, isn't it possible to make a kind of hash, shredding the pork and mushing up the spuds and parsnips to make sort of bubble and squeek mix? (Again, I think Hugh has a recipe.)

I usually make a kind of tomato -ey stew with left over pork, tomatoes, red wine, onion, left over oast potatos carrots - bung it all in for a couple of hours it's lovely.

Thanks- for both idea.

Unfortunately I am allergic to tomatoes.

the hash is the sam e idea as rissoles- using left over veg etc. Ihave 3 of Hugh's books so will have a browse.

DH not keen on mayo so will give that a miss.

I normally cut the pork into slices and fry it up the following evening.

I also have it cold in my lunchtime sandwiches with a bit of pickle and tomato.

I did the same this week. Used up the pork two ways:

Some finely diced for a special fried rice dish
Some in a soup with the left over roast vegies, some pearl barley, the left over gravy, tomatoes and wine
Have also made into shepherd's pie v successfully in the past.

leftover pork is yummy reheated in gravy with stuffing and apple sauce on some nice crusty bread!

I sometimes slice the leftover pork and cut into smaller pieces then mix it with veg and gravy. On top I will put the leftover roast potatoes and parsnips (sliced and layered). Very tasty. No nice name for it here but DC's call it pig sty pie. Hmm

Irish Stew with pork.

Pork,onions (leeks too if you like), carrots, other veg, potatoes.

I always use left over roast pork in a stir fry with rice noodles ( a bit like singapore noodles), mmmm, yummy
