Suggestions welcome for a low key dinner party

Thought I would do nachos for a starter, then chilli, rice and tortillas for main. (sour cream, cheese,lettuce etc)

Does that sound okay, or would I be better off doing the nachos with the main?

Also what could I do for dessert, wanted to keep it Mexican themed if possible.

Any tips/hints/suggestions much appreciated

I think Nigella has a recipe for icecream flavoured with tequilla. Haven't tried it but it sounded nice! Maybe somebody on here will know if this is real, or if I imagined it.

Otherwise, I think a creme caramel is quite traditional.

Love lime cheesecake - good possibility.

I saw creme caramel when I googled mexican desserts, was a tad confused as I always thought it was a french dessert! lol

Will the nachos have the same meat/chilli mix in it as the main (that's how I do it) - 'cos that would be a bit samey iyswim... or is the nachos just with cheese?

Would definitely serve up salsa with the main - bowl of chopped up tomato/spanish onion/avocado, with juice of a lime squeezed onto it, and salt and pepper and a bit of fresh chili and coriander if you have them, if not don't worry. Easy as.

Dessert - chili chocolate mousse! It actually tastes amazing, you should be able to find it in the supermarket (easier than making your own Grin, serve up with a blob of creme fraiche or ice-cream. It's a great dessert as people probably haven't tried it but will love it.
