I need some vegetarian soup recipes that I can do during the weekend and take it for lunch.
Dd has started liking soup as well so she can take it as well.
Please may I have some recipes please..

Simplest but yummy:

Chop an onion, a couple of carrots, a courgette (amounts of all of these can be played with as it's completely made up). Add a tin of tomatoes, bit of salt, pepper, season-all and couple of hundred ml of stock (vegetable or vegetarian chicken stock).

Allow to simmer until veg have softened.

Enjoy!

P.S. I also add in anything in the veg drawer that looks as if it's not going to last much longer!

If you like mushrooms, this is a great recipie I found that works everytime for me;
Ingredients
50g unsalted butter

325g chopped onions

500g fresh sliced mushrooms

2 tsp dried dill

1 tbsp paprika
1 tbsp soy sauce
500ml veg stock

250ml milk
3 tbsp plain flour

1 tsp salt

ground black pepper to taste

2 tsp lemon juice

4 tbsp chopped fresh parsley

125ml soured cream

Just melt the butter in a pan and pop onions in for 5 mins. Then add mushrooms for another 5 mins. Stir in dill, paprika, soy sauce and stock. Reduce heat to low, cover, and simmer for 15 mins.

whilst this is going on get a bowl and whisk the milk and flour together then pour this into the soup, stir well, cover and simmer for 15 mins more stirring occasionally.

Lastly add salt, ground black pepper, lemon juice, parsley and soured cream and give it a mix then let it heat through over low heat, about 3 to 5 minutes. Do not boil! then serve it up.

i made this the other day, skinning the tomatoes is a bit of a hassle but the result is yummy and well worth it.

I do a spiced lentil one -

fry onions, garlic, chopped carrots. You can put other vege in too. Add cumin seeds, a chopped red chilli or some chilli flakes, some black pepper and turmeric and some mustard seeds plus a tin of coconut milk, some water and some red lentils. Add salt and lemon juice once it's all cooked. You can add a tub of passata too. It's nicest when blended.

Leek soup: Sauté a sliced onion gently in butter, add 3 sliced leeks, put lid on the pan and sweat gently for 15 minutes. Add about a litre of water and a chicken stock cube. Simmer for 20 minutes then blitz with a stick blender.

Cubes of feta dropped in the finished soup add a lot of taste and a bit of protein.
