Roasted veg - suggestions please

Got some frozen roasting veg and am doing a roast tonight - need some ideas to liven them up. Flavours need to go with Pork

Olive (not virgin) oil,bit of lemon and some thyme and garlic.

Actually might do garlic and lemon then add some fresh ground black papper after!

You could always mix a bit of mustard with the oil.Also how about roasting some apples as well?

if you have any cous cous sprinkle it on it to make them extra crispy, saw this on c4 this afternoon and it worked a treat for me.

Agree with Moondog - apples work really well, plums, apricots or prunes work well too.

Beetroot which is in season is the best though!!!!
