Help with veggie ideas please

I'm trying to do a Sainsbo's order and other than Thai curry and haloumi in pittas with salad, I can't think of ANYTHING I fancy cooking/eating this week.

Can anybody please inspire me?

No mushrooms, aubergine or tinned tomatoes.

Butternut squash and sage risotto

Taglietelle with butternut squash, rocket, green olives and sage&lemon butter (can you spot a theme here? Wink)

Celeriac and stilton soufflé

Herb pie- 'tis very light and delicious.

Pad thai/stir fried noodles & vegetables of some kind

Vegetable tempura

Good old nut roast

These are brilliant - the taglietelle sounds bloomin' gorgeous - do you follow a recipe or make it up?

I copied from a restaurant dish made it up.

Roast chunks of squash with olive oil, salt & pepper, set aside.

Make sage butter by melting butter with chopped fresh sage, removing from heat after a few mins and adding lemon juice (I add about a tablespoon full, but add to taste)

Cook taglietelle, add chopped green olives (not black- the acidity of the green works well with the sweetness of the squash), fresh rocket, squash and a few small chunks of mozzarella if you like, then dress with sage butter.

I'm hungry now Grin

I love white bean dip or houmous, if you think about it there are SOO many veggie dips. with corn chips, crudites etc. YUM

Stuffed peppers - yes, the dds like those. Thanks. DD1 doesn't 'do' cheese if she can get away with it, so won't eat cauli cheese etc.

Quorn mince shepherd's pie.

You could give Delia's parsnip roulade a go, tis delish but a bit faffy. I'm sure I've linked to it a thousand times, but here it is again- here. Well worth the faff, IMO.

Delia thing looks lovely but deffo not for normal after-work cooking! Will save for a special occasion.

Pasta with feta cheese, pine nuts (toasted or fried in olive oil), thyme and garlic - easiest recipe ever.

Roast veg and pasta with lots of parmesan.

We all like pasta but it's not easy to keep us all happy because dd1 doesn't like cheesy or creamy sauces and I don't like tomatoey ones.

Pesto? There's a traditional Italian recipe I made ages ago - pasta with pesto, new potatoes and green beans. The two carbs thing works strangely well. Or pasta with sundried tomatoes, olive oil, garlic and rocket is nice.

You could make the shepherds pie with lentils instead of quorn mince... May be a bit heavy for your tastes though Wink

We're having puy lentil lasagne for dinner tonight and it smells gorgeous. I do sometimes make a shepherd's pie with a similar lentilly filling - but the sun was shining and it made me want to order light things!

Love, love homemade pesto - but my blender is dead. :(

Can't get my head round pasta with potatoes at all though.

Not a recipe as such but -

Onions - cut into small chunks rather than sliced
Carrots - ditto
Crushed garlic
Fry in olive oil
Add lots of fresh rosemary, a teaspoon of honey, one of mustard, loads of chopped flatleaf parsley and black pepper and a big slug of port. Other herbs if you have them.
Add about half a box of puy lentils (so I imagine it's about 250g) and some water. Cook in oven for about an hour - it may need more water.
Add salt and a tub of passata plus some sliced roasted red peppers. Roasted mushrooms would be good too but the dds don't eat them.
Use instead of the meat layers.
