banana muffins

Does anyone have a recipe for banana muffins, or know where I can buy some? I have read they are the food most likely to help you sleep, so I'm giving it a try! I'm not a very good cook, though, so I'd prefer a recipe that is very easy

10 oz self-raining flour
half teaspoon salt
bananas
walnuts (optional)
4 oz granulated sugar
1 egg beaten with fork
2-3 fluid oz milk or water
3 fl oz vegetable oil

Pre heat oven to 190 c
sift flour and salt
in one bowl mix up mashed fruit, sugar, egg, milk and oil
Pour wet ingredients onto dry
stir well until mixed but lumpy
transfer to muffin cases
bake for 20-25 mins

I got this recipe from some angel on mumsnet - any fruit will do but the banana ones are yummiest and we all love them. HTH

asda do a box you make at home in the cake section.

Makes 6 huge muffins and the are superb!!!!!!!

I might have to try out this recipe tomorrow. I love making cakes, unfortunately I love eating them too!
