It's DH's birthday today and not only is he working a 12hr shift, but I've messed up with his birthday cake !
I've got all of the ingredients for a victoria sponge EXCEPT JAM !

DD2 has D&V so I can't even go out to buy any !

Do you think IKEA Lingonberry stuff will do the same job and taste similar ?

Thanks !

do you have butter, icing sugar and milk in the house? If so you can fill it with buttercream instead.

Oh, I was going to do that anyway lucy but I thought it should have jam as well (can you tell I'm not really a cake person !).

Any thoughts on the lingonberry ? Is it in any way similar to strawberry/raspberry jam ?

Yes! The taste is sharper, more adult if you like, but it goes wonderfully with buttercream. I use it often, actually.
