How can I use 1kg of butter up?

Swimming the channel is not an option!

Due to a cockup an oversight, I doubled up on butter, and it was on BOGOF so I've 2 x 500g butter to use by Mar 16th - what can I do? Puff pastry and freeze it?

It wouldn't last long in this house. I'd make cakes with loads of butter icing Grin

Freeze the butter.

I do it all the time as we can only buy salted butter in France.

Oh thanks, I didn't know you could freeze it. Saves me having to post another thread on how to use up puff pastry! Grin

Or just use as you would... It will fine for a few weeks longer than it says, honestly

Salted butter lasts a lot longer than the Use-By dates. I've eaten butter that was forgotten and stored away in a cool shed for over 6 months. It was fine, we were fine for eating it. No ill effects!
