Good pancake recipe

Hi - would be so grateful for good pancake recipe! :o)

100 gms plain flour
2 eggs
300 ml milk
pinch of salt
melted knob of butter stirred into mix

you're after a single cream consistency

melt a little butter pour in about three tablespoons worth

flip when you see the bubbles

I'm trying it later

Top tip on daybreak this morning - instead of melting butter in pan - which in my experience often burns after a few re-uses - have a peeled raw potato with a fork in it, in oil and use that to baste your pan between pancakes!

Top topping? cointreau. Yum.
