It's Monday so what's in your random leftovers special?

Monday in our house is usually something thrown together created from bits and pieces leftover from the weekend.

Today it's a student special of bacon, sausage, onion, celery and green pepper, tinned tomatoes and black beans cooked up in a big pot and served with rice.

I'm being nosy and looking for future inspiration, so what's yours today?

we have pizza for dinner - one of those "deli" ones at sainbug's.
It was reduced yesterday lunchtime, so we thought "yeah, why not?"

That reminds me, I've gone for the old standby 70s classic of a tin of mandarin segments in orange jelly for pudding. Surprisingly popular with dh Grin!

The mandarin segments in orange jelly (tangerine if I can get it) is a staple here, topped up with fresh orange juice instead of water and skooshie cream on top!!

I'm really crap at risottos, I'm a bit too impatient I think. Mind you, with a 4 year old and a 15 month old getting on each other's nerves, they tend to catch in the pan once too often Blush.

We do pizzas with all of our leftovers (and dry cheese) on a pizza base (£1.09 at Sainsbury's, last time I looked). Excellent leftover user.

Also, omelette and story fry.

Normally we have cold meat with bubble and squeak, all from leftovers.

Tonight, we branched out. Had roast pork yesterday and had some part-baked ciabattas, so I did pork, stuffing and apple sauce on hot ciabattas. YUM!

Leftover lamb and veggies mixed in with leftover gravy from sunday lunch, sliced some potatoes and cheese on the top, an hour in the oven and it was lovely

Leftover beef, sliced thin and covered with left over gravy & onions & heated in the oven. Sliced spuds mlayered with cheese and onion and left over cauliflower cheese. Add milk, put lid on, place in oven til cooked then remove lid, add more cheese and back in oven to brown. Plus reheated left over veg (mange tout and sprouts)
