Help! my crystalised Rose petals look shit!

Making a birthday cake for my mum's 60th tomorrow and need crystalised rose petals for decoration.

Everything I've read says dip in egg white then in icing sugar and leave to dry. The waitrose website says you can dry them more quickly in a low oven which is where mine are now.

They've been in about 20 mins and they look crap. The icing sugar is really thick and lumpy looking and well, they just look rubbish. Will they get better or do I need to ditch this batch and start again?

Any experts?

Hi, never made crystallised flowers with icing sugar - Always caster sugar.

Cake decorating books I've got say to mix 15g of Gum Arabic with 2 tablespoons of rose water and leave for 2 hours. Then paint over petals and sprinkle with caster sugar.

I've never actually used the gum arabic method - but I've used egg white - lighly beaten painted over the petals then coated with caster sugar and left to dry. Always seems to come out OK.

I'm sorry to say that I'd be tempted to start again if I were you Sad.
