As the title suggests, my dd wants to bake some cupcakes tomorrow and I don't have a recipe. If anyone could recommend one, I'd be so grateful. P.S. My dd has just called out that she particularly loves the yummy icing - so that's a must, too. Many thanks.

125g each of marg, sugar and SR flour, or, if you want chocolate cakes, half flour, half cocoa
2 tbsp milk
2 eggs.
1tsp baking powder.

Sling it all in a bowl and beat till smooth.
Spoon into 12 muffin cases.
Bake at GM4 for 10-20 mins till skewer comes out clean.

When cold, ice with buttercream

Good recipe for children to make as you really can just mix it all together.

Ahem... I pulled a fruit crumble out of the freezer and we had that instead!

Was very nice though. Felt that freezing had possibly improved the flavour (rhubarb blackberries and apple) as when we ate the first one (made two at once) I felt it needed a bit more sugar but this one was fine as it came.

ive tried nigellas recipe, its good cis its simple, so good for kiddies, but allegra mcevidy's cupcake recipe much lighter and yummier-i found it on google i think it was on the guardian website. I guess this is if u want to try again when you dont have a crumble fallback :)
