Quick question about some home made bread

I made some bread today and followed all the instructions to the letter, including resting and cooking etc, and my rolls came out like bullets on the outside and a bit doughy on the inside. They taste alright though. Have a sneaking suspicion that the flour I used was out of date. Was trying to use up an old bag. Would that have stopped them from rising?

Not sure about the flour but maybe your oven was too hot?

I had them in at about 210?c for 15 mins which seemed about right. They're not burnt, they're just very hard! It was one of those flour mixes with the yeast already in so I guess they just didn't rise.

Will go and get some fresh flour and try again!

Did you use a bread mix to make rolls?

I've done this and had the same result as you!

I do this one and they are really soft.

This gives soft rolls too.

It seems hot oven is not a problem though.

Yes it was a bread mix. I think it must have been out of date yeast.

The Guardian recipes look nice!

Flour performs well, even when it's getting on a bit, but old yeast is just dead.
