Beef pot roast/braised beef

Anyone got a nice recipe for this, to make a really cheap, defrosted hunk of beef taste good?

I just normally chop a bunch of root veg and layer them in the bottom of a casserole, pour over a cup of boiling water, then plonk the joint on top. Sometimes I smother it with horseradish or mustard first, but always sprinkle liberally with black pepper. Bung the lid on tight then stick in a low oven (150C) for prob 4 or 5 hours.
