Diabetic cake recipe; please help me choose!

I've been asked to make a cake for my Mum's friend's birthday on Saturday and he's diabetic. I've googled recipes and there seems to be conflicting advice on what the best recipes are. Some websites suggest using Splenda instead of sugar, others say recipes must be low fat rather than low sugar while others say any low carb recipe will suit a diabetic.

He is the type of Diabetic who monitors his diet rather than injects insulin if that makes a difference.
Which of these would be best?

Lemon and blueberry cake:
flour, oil, Splenda, yogurt, eggs, vanilla, lemon zest, blueberries, lemon juice

or Hazlenut and Brown butter cake

Hazlenuts, butter, vanilla, Splenda, egg whites, flour, unsweetened chocolate, cream, coffee.

TBH my DH would probably eat a small slice of "normal" cake and compensate with the rest of his days food, or by adjusting his medication.

Something low GI is the best for diabetics (I have asked diabetic dr friend), so anything with fruit in, or with wholemeal flour.

Or he can just eat a small bit and do some exercise afterwards!

The second cake would probably be best. I'm not diabetic but my Grandma is, and she prefers for example dark chocolate over diabetic chocolate.
