Aubergine & spinach- what to do?

Hi all

I have two aubergines and a bag of spinach which need using up for dinner tonight, I can't think what to make though, any suggestions?

Its just for DH and I and I can always pop out and get any other ingredients if needs be, I have all the usual spices, store cupboard stuff in. Doesn't need to be veggie,

Any ideas welcome!

Some sort of Egyptian receipe - they add cheese into a sort of gratin dish.

Aubergine is good with lamb either minced or cubed.

Try BBC food receipe website, list these ingredents and it will give you options.

Got any parmesan? Parmigiana di melanzane, with lots of spinach in the tomato sauce?

Can't vouch for that recipe, btw. DH has an unnatural hatred of aubergines, so I never get to make this.

thanks both. Unami I did a version of that recipe and it was deelish, I griddled the aubergines first and they were yummy.

Too late but I often fry onion and aub then add spices ( coriander, cumin ,paprika) tinned toms, tinned chickpeas and spinach. We have it with cous cous or baked potatoes and the dc have sausages with it.
