Sunchowder Needs your help! Looking for your favorite recipes for fundraiser

Hello Mums! My 11 year old DD was interviewed last week and accepted to participate as a member of the People to People Student Ambassador Program. She is going to get to go on a 20 day trip to your side of the pond this summer with the delegation!! She will travel to Ireland, Wales, England, France, Holland and Belgium. The objective of the program is to promote international understanding while building leadership skills among America's youth. The only down-side is that the tuition is very steep (expensive) and we need to do fundraising to make the trip possible. So....I am taking on the project of publishing a cookbook as the main fundraiser! I am doing the original art for the cover and dividers and it will be plastic comb sprial bound and laminated. I am hoping the price will be between $10 and $12 American Dollars. I would love it if you would be willing to share your most favorite recipes on this thread along with your either your real name or mumsnet name (doesn't matter to me!) and I will use your recipes in the book and print your name along with each recipe. The book will be called "Sunchowder's Emporia", A Collection of Recipes for the Heart and Soul. I am getting an ISBN and everything. I am terribly excited about it. I have incorporated about 75 of my mums and my most treasured recipes and I have sent out requests to 50 of my friends here in the States, so I hope to have a gorgeous book at the end of all of this.

I don't want to request or pressure anyone to purchase the book (unless you want to!), I was just hoping for contributions to make the cookbook richer and more diverse. I appreciate anything you want to contribute and can't wait to see your responses. If we are successful, the book should be published in March 2006. I am going crazy trying to get the advertising in line to help defray the printing costs so I have my hands full, but I am enjoying it and my DD is hard at work printing and collating and delivering things to help support the effort. heres a recipe for you

apple and rhubarb crumble

4 cooking apples
4 rhubarb sticks
lemon juice

topping
200gm self raising flour
handful of desicatted cocunut
2 tablespoons of sugar
4 heaped tablespoons of margarine

chop apple and rhubarb and place in pot of water with lemon juice.
bring to the boil then simmer until fruit is soft.

whilst fruit is cooking make topping by combining flour and marg until like breadcrumbs, then add sugar and coconut. mix together.

drain fruit and place in greased ovenproof dish, place topping on the top and spread making sure you cover all the fruit
place in middle of hot oven and wait until topping is golden brown
serves about 6-8
depends how greedy you are really

note* can use all different kinds of fruit combinations ie pear, peach strawberry etc let ya imagination run wild.

Carmenere -- looking for all types really. The cookbook with have dividers and I am covering all sorts of foods from starters to desserts. I am also putting together a wine section, a tea section, selecting fruit and veg section, substitution section, lovely sample menus and how to prepare for a party with party ideas and themes. I so appreciate anything you would like to send or post. Thank you! hi sunny
here's mine
potaje (chickpea soup)
one tin chickpeas
one tin canellini beans
1 potato
handful of spinach
garlic
half onion
tspoon of pimenton(paprika)
tspoon of flour
2 tomatoes grated or tinned tomatoes
olive oil
1 boiled egg
chicken or vegetable stock
In a large pan boil potatoes in 1/2 litre of water and when nearly cooked add beans,cheak peas and stock.
Fry the onion and garlic,add the tomatoes,flour and pimenton,mix well and add to the soup,add the spinach simmer for a minute and put the sliced egg on top.

hmmmmmmmmmmmmmmmm I wonder what recipe I should post?

Lemon Drizzle Cake

9oz sugar
9oz butter
12oz s/r flour
4 eggs
3 level tsp baking powder
6 tblsp milk
grated rind 2 lemons

Mix all together. Put in lined tray. Bake about 30-40 mins (until knife comes out clean). Prick cake with fork and pour over some warm lemon juice (see below).

Squeeze the juice from the lemons and heat (20 secs in microwave). Add icing sugar to consistency you like. Spread over cake.

You can put MarsLady as the name. That will tickle me!

Pesto chicken

Make a small slice in chicken breasts, stuff with basil (this is optional)

Mix cream cheese ( i use Philadelphia) with pesto to taste.

Smother chicken breasts with mixture,

Top with sliced beef tomatoes [again optional}

Top with grated Cheddar cheese or whatever you have to hand, emmental is good too.

If feeling decadent add a layer of goats cheese [optional]

Top with grated parmesan [optional}

Finally bake in the oven for about 20-25 mins, might need longer if you have all the cheese layers.

This recipe can be lowfat if you use low fat cream cheese and leave out all the cheese layers and just add a little parmesan. Or it can be a cheese lovers dream.
