Sunchowder Needs your help! Looking for your favorite recipes for fundraiser

Hello Mums! My 11 year old DD was interviewed last week and accepted to participate as a member of the People to People Student Ambassador Program. She is going to get to go on a 20 day trip to your side of the pond this summer with the delegation!! She will travel to Ireland, Wales, England, France, Holland and Belgium. The objective of the program is to promote international understanding while building leadership skills among America's youth. The only down-side is that the tuition is very steep (expensive) and we need to do fundraising to make the trip possible. So....I am taking on the project of publishing a cookbook as the main fundraiser! I am doing the original art for the cover and dividers and it will be plastic comb sprial bound and laminated. I am hoping the price will be between $10 and $12 American Dollars. I would love it if you would be willing to share your most favorite recipes on this thread along with your either your real name or mumsnet name (doesn't matter to me!) and I will use your recipes in the book and print your name along with each recipe. The book will be called "Sunchowder's Emporia", A Collection of Recipes for the Heart and Soul. I am getting an ISBN and everything. I am terribly excited about it. I have incorporated about 75 of my mums and my most treasured recipes and I have sent out requests to 50 of my friends here in the States, so I hope to have a gorgeous book at the end of all of this.

I don't want to request or pressure anyone to purchase the book (unless you want to!), I was just hoping for contributions to make the cookbook richer and more diverse. I appreciate anything you want to contribute and can't wait to see your responses. If we are successful, the book should be published in March 2006. I am going crazy trying to get the advertising in line to help defray the printing costs so I have my hands full, but I am enjoying it and my DD is hard at work printing and collating and delivering things to help support the effort. No Stress Risotto

Heat your oven to 200 C

Into a oven dish put
2 chopped onions
2 cloves of garlic (more if you like it)
A red, de-seeded chilli (again, more if you like it hot)
Some lemongrass, chopped
2 crumbled Kaffir Lime leaves

Heat a non-stick frypan and dry fry about 500g of chicken mince. Tip this into the oven dish. Into the still hot pan put one cup of uncooked Arborio or Canelotti rice. Toss it around a bit until it starts to change colour and turn opaque. Tip this into the dish as well. Turn off the heat under the pan and pour in 2 cups of hot water into which you have dissolved a chicken stock cube. Scrape any bits of caramalised chicken off the pan and pour the whole lot on top of the chicken rice mixture. Add a tablespooon or two of lime juice to the mix.

Roughly stir the mix so it is evenly distributed. The liquid should just cover the rice and meat. Don't worry if there is too much though, it can be adjusted later. Cover the whole lot with foil and put into the oven.

After 20 minutes take it out and test the rice and seasoning. If there is still too much liquid, put it back into the oven without the foil for another 5 - 10 minutes. Doing this creates nice clumps of browned rice.

Just before serving you can stir in some handfuls of chopped spinach, chopped peppers or spring onion for colour if you want.

I love chicken and apricots

for 2

4 boneless skinless chicken thighs
1 small onion chopped finely
2 cloves garlic chopped finely

fry together in a big pan with a little oil

meanwhile boil the kettle

in a jug

2 tablespoons apricot jam
veg stock cube
1 tbsp tomato puree
1/2 tsp each of chilli, cinnamon, tumeric

1 tsp paprika

pour 1/2 pint boiling water over the above

when chicken starting to colour tip jug over and stir well
bring to boil and simmer for about 25 mins

serve with cous cous or rice and roasted veg

plus for vege recipe try this
4 red onions
1 clove garlic
1 dsp brown sugar
1/2 tsp cumin
2 tbsp pine nuts
1 pack puff pastry and a bit of cheese

slice onions, chop garlic put in frying pan with butter and oil and stir fry until onions softening. Add sugar, nuts and cunin, lower heat and keep cooking.

Roll pastry and line a 7 inch dish (cut 1/2 way through the pastry around the inside of the dish)

Blind bake until golden. Push down the middle (that you previously scored) tip over onion mix. Grate cheddar cheese ocer (or vege cheese) amd bake for 10 mins hot oven.

Soupy's choc chip cookies are truly wonderful - can't find the recipe (must be doing something wrong when trying to search it) maybe Soupy will oblige?

3 egg whites
180g castor sugar

Makes about 16 singles/ 8 doubles

Beat egg whites till stiff in a bowl.
Add sugar slowly keep beating it in. (you can add vanilla flavouring here but I don't)
Place in swirls using a spoon onto flat tin, lined with greaseproof paper (either shaped like boobs or into a nesty shape)

Bake in preheated oven at 120 degrees for about 60 minutes.
Switch oven off and leave in till cool.
Serve with whipped cream/ strawberries and watch 'em go! (should have a chewy middle this way - if don't like them like that then leave in slightly longer)
