Haven't made curry before, help!

Firstly, Blush as I realise a basic curry is something that everyone can do, but I am trying sooooo hard to learn to cook but my DH is such a fussy eater and so difficult with food that I can't even meal plan properly as he vetoes everthing I put in the shopping trolly. Well, he used to but now the worm is turning Grin

So! Looking through cupboard I have curry paste, coconut milk and passata (he won't eat tinned tomoatoes). I have onions, peppers, garlic, dried cumin stuff (I think, and various other basic dried spices) and chicken.

Can any of the above be used to make a decent curry?

havent tried this but it uses passata and coconut milk: Cocnut chicken masala

We make a simple curry with exactly those ingredients. Marinade (if you have time) the chicken in a spoonful of curry paste mixed with yoghurt (if you have it), cook in the oven for 10 mins or so. Sweat onions in more curry paste add passata and coconut milk, bring to boil, reduce heat and add chicken.

Why don't you do what I do? Cook one main meal each day for the whole family, let him eat it or go hungry.

Mummy2, this is exactly what I am doing now. He would literally survive on plain chicken, boiled potatoes and peas if I let him, but I have had enough now!

Was lovely thanks! I am now able to do curry, shepherd's pie, chilli, casserole and pasta bake (proud slattern emoticon). I know it's all really basic stuff but until last month I never really cooked at all.

I've been reading the 'what's for dinner' threads every day to get ideas Grin

A really simple chicken dish that I make frequently-
Chop some chicken breasts into chunks, fry some onions and some chopped red pepper and put all the bits into a saucepan or casserole dish and cover it with stock. When it is fully cooked, stir in some cream and add a bit of dried tarragon. Simple and not too fussy.
