Why don't I make this more often?

I have just sat down for a lazy Sunday lunch of soft boiled egg and soldiers and remembered how scrummy they are. I usually have eggs in the house but yet I never think to make it. In fact the last time I had it was 6 months ago and then probably about 8 months before then!

So what other yummy things do you absolutely love but don't make very often.

every pancake day vow to make them more often as easy and yummy.... and never do!

Baked beans and a baked potato.

Eggs: there was as stage where people were told to avoid them as they are high in cholesterol. Now, scientists have twigged that cholesterol cannot be absorbed in the GI tract, but is only made internally so the green light is back on for eggs (which are very low in saturated fat which is the building block for cholesterol). in fact, latest thinking is that eggs contain an inhibiting mechanism for internal manufacture of cholesterol :-) They are fab. Scrambled on wholemeal toast with fried cherry tomatoes on the side. Yum.

My children love dippy egg. It is a regular tea here when the hens are in lay.

Fired mushrooms on toast is mine as well. i only do it about once every 5 years as no one else likes it, but I love it - so quick as well.

I love boiled eggs so much but could never make them - so I bought myself an egg boiler. Best £15 I ever spent. No mess, no timers, no faffing about singing two choruses of Jerusalem, no pans with stringy bits of egg in, just perfect golden runny yolks and just-set whites. Now I get real free range eggs from my dog-sitting lady and enjoy a really simple but delicious supper at least once a week.

Am quite evangelical about my egg boiler. Blush

A big pile of portabella mushrooms with scrambled eggs on toast. I had that at the weekend when I'd cooked mussels for my DCs. It was bloody lovely. It could only have been bettered if I'd had some black pudding as well.

i've just had a sandwich made with toast, grated mozerella and tuna mayo, was lush but i feel queasy now!
