Dear and wise women of Mumsnet: Could someone give me a tried and tested recipe and instructions for rice pudding please? I have: pudding rice; milk; nutmeg; vanilla pods - but I'm not sure of proportions or how to put it all together ... it's for two people, but so long as it reheats for a second day, a recipe for four would be very welcome ...

I normally do 3 tablespoons pudding rice, 2 tablespoons sugar mixed in 1 pint of milk in a greased dish. You could add the vanilla to the mixture and grate the nutmeg on top. Leave in a low oven for at least and hour, stir half way through.

Thank you FessEst! There are loads of (complicated and exotic) online recipes, but I wanted one that someone has actually cooked.

Will cook it tomorrow.

2 oz pudding rice,
1 pint milk,
1 oz caster sugar,
1 strip lemon peel,
ground nutmeg,
half oz butter

grease ovenproof dish
add (almost) all ingredients
stir well
sprinkle top with nutmeg!

Bake at 150 C for 2 to 2.5 hours (stir at half time)
