chicken stuffing

Has anyone got a good recipe for a chicken stuffing? I want to try something new. We eat just about everything, so no problems with the list of ingredients!

I'm not great on quantities but I use fresh White breadcrumbs (whizz stale bread in food processor) (4 slices should do it) I chop one small onion put it in a Pyrex bowl, microwave for 30s - 1min with a splash of water to soften. Mix in breadcrumbs, sage (small handful of finely chopped leaves) and sausage meat (about half a shop bought pack or 3 or 4 skinned sausages.) can also add parsley (handful) season, add more water if still dry. This is enough for about 4 servings. I tend to cook it separately from the bird for about 30mins 200C but can also cook it inside the bird. I don't like much variation on this recipe although for bigger portionn I might add stick of finely chopped celery with the onion then scale up on breadcrumbs.

similar to Zen - but I add 1/2 finely chopped onion an egg to bind it and a smidgen of stock.

and use chopped chestnuts at christmas

Thanks! It sounds delicious! I would never have thought of the sausagemeat.

I like the chestnut idea too, very handy, as SIL has a chestnut tree in her garden!
