What are your favourite lunches when it's just you at home?

I'm not big on sandwiches and can't be bothered with anything that takes more than a few minutes to assemble. I go through phases: innocent veg pots, Covent Garden soups ... Am a bit stuck at the moment. Inspire me.

Eggs and soldiers. Two eggs, soft-boiled, my childhood egg cup (with my name on it) and the tops cut off. Marmite on the soldiers (made from two slices of toast). One teaspoon for digging egg out once dunking is no longer and option. And all washed down with a glass of milk.

It's the only time I will drink milk on its own.

I work from home so this is a great thread for me to get new ideas. Some of my lunches:

  • Beans on toast
  • Soft boiled egg with avocado
  • Pitta with hummus, olives, salad leaves
  • Scrambled eggs with mushrooms
  • Jacket potato with beans and grated cheese
  • Veg stir fry with some chicken or prawns
  • Heinz tomato soup with slice of toast
  • Leftovers from dinner

2 tablespoons of Greek Yogurt mixed with generous teaspoon of lime pickle. That's an instant dressing for:
cold meats
tinned veg/beans
dip for breads
anything else/mix with drained artichoke hearts

Mmmm this is making me hungry!!

  • pitta with taramasalata or hummus
  • toasted crusty bread with potted shrimps
  • avocado and bacon sandwich
  • french onion soup with cheesy croutons
  • jacket potato with tuna mayo and grated cheese
  • beans and cheese on toast
  • pate and toast

Invariably though with a 3 and 1 year old it's whatever I can grab quickly inbetween feeding negotiating every mouthful with them

Somehow I can always manage to take a packed lunch to work with me, because the food there is terrible, but when I'm faced with a whole fridge at lunch time I don't know what to do.

Mm, they're nice ideas RachelHRD. Driftwood, I tried the lime pickle thing today with some cold lamb chops - delicious :)
