Failsafe Toad-in-the-Hole recipe?

Remember seriously hot oven and seriously hot fat before you even contemplate anything with this recipe.

Whisk your batter really well, lots of bubbles and let it stand for a while if you can.

And DON'T open the oven until a minimum of 20-25 minutes!!! However tempted you are, it will flop, for sure.

Thanks for these - I used a recipe on Fri evening, can't remember where I got it from, but wonder if you can tell me what happened...

It looked lovely, and most of it tasted great, but there was a layer of oil (veg oil) still at the sides/bottom of the dish, so it meant that rather than going crispy, some of the pudding was still a bit floppy and very greasy?

Anything to do with me using a casserole dish rather than a roasting dish? I wondered if maybe the oil didn't get hot enough from underneath?

Or perhaps I just put too much oil in the dish to start with, I think it said 2 tablespoons...

Any ideas what happened?

Thanks for the other recipes, we loved it so will try the others next week :)

Toad in the hole is very dependant on the sausages you use. That may be why you had too much fat. I put my sausages and the oil in the tin for ten minutes before adding the batter, that way if there is too much oil you can normally tell.

I always use a tin rather than a casserole.
