quick beef casserole ideas please

I want to make a beef casserole tonight with a nice gravy, lots of veg and rice. Problem is this.... I work full time so the recipie cant be longer than an hour or so. I also do not have pressure cooker etc.... Can anyone help or is this just a hopeless dream?

That should be do-able, 15 mins to chop meat and veg, 45 mins for the casserole to cook. You could cheat and buy prepped veg from the supermarket. add a little flour when browning the meat and a slug of wine to the stock. It should be lovely.

If you use a more expensive cut of meat it won't need such a long cooking time, however you get a better flavour with a cheaper cut of meat over a longer cooking time.

cook it tonight for an hour, leave it in the fridge then cook it again for 45 mins tomorrow night - it will be much much nicer.

what ingredients would you use for the gravy Camrmenere? Do I just add all the ingredients and pop in the oven?

Brown the meat and veg in oil over a high heat. Add a tblspn of flour and cook that for a min or two. Add stock, a little tomato puree and herbs.If I were you I would add parsley, thyme, rosemary and a bay leaf or two. Place it in the oven and cook for a min of 45 minutes

Enid is right though, casseroles and stew ect always taste better the next day. I usually make a double lot to either freeze or have the next day
