Bread Pudding, what recipe do you use?

I will be making bread pudding at the weekend. I'm going to be using wheatfree bread- this will be ok, won't it?

Also suet or no suet? I'm sure my mother's recipe has suet in it.

What do you think?

the Dan Lepard one is PERFECT! but you need to make double cos it isn't very thick
