Cowboy hotpot - onions, carrots, peas and sweetcorn with baked beans as a sauce. Mix in some smoked cheese, or barbecue sauce if you can't find a veggie smoked cheese, and then potato slices on top and cook in the oven until the potatoes are browned.
Corn fritters - sweetcorn in a pancake batter, about the size of scotch pancakes. Serve with salad if she'll have it or a baked potato.
Veggie burgers - I make them with one of those single serving boxes of stuffing and red lentils boiled in stock, mixed together and shallow fried.
3 bean chilli - normal chilli sauce, with baked beans, kidney beans and chickpeas. TBH I normally make it without the chickpeas as I'm not too keen on the texture.
Mini Chilli Pizzas - small soft bread rolls, toasted. Add a layer of refried beans, salsa possibly homemade if she'll have it, and grated cheese.
Veg Stew - we had this tonight. Just one of those casserole packs from the supermarket mixed with a tin of tomatoes and a made up packet soup
as had ran out of stock. Just stuck it in the slow cooker for the day.
HTH - my OH has been a vegetarian since I've known him, but he's not fussy at all and will gladly eat any amount of Quorn. My DS, 8, just decided to become one last month but doesn't eat any bloody veg except carrots. he's a pain in the arse at the mo!!
