Pancake day tomorrow, what's your never-fail pancake recipe?

I'm going to try some blueberry pancakes (inspired by another thread which I can't find at the moment, Blush )

What else can I try? Fed up of boring old plain ones with lemon and sugar.

100ml milk, 1 egg and 1 heaped tablespoon of plain flour per person, whisk, leave to stand for at least 30 mins but preferably an hour, melt about an ounce of butter in the frying pan and whisk this into the mix, start cooking. yum.

I've moved on to making drop scones instead of pancakes. Much nicer. I like them savoury with ham, cheese and black pepper.

1 mug sr flour, 1 mug milk and 1 egg whisked and then cooked straight away. thanks to jamie o and so easy my kids cook it.

I prefer big thin ones.

250ml milk, 120g plain flour, 2 eggs, pinch salt makes 6 thin pancakes.
