Help - Atkins menu required for important dinner guest!!!!

Business colleague of dh.

Says he is not on the full Atkins - so can eat veg now (great!!).

Any reasonably straighforward, nice recipe ideas please? He's coming tomorrow night.

I did steak, grilled and sliced thinly on a bed of salad with a dressing made of fish sauce, soy, chili, lime juice for a friend of mine who was on atkins once - yummy but very strong asian flavours?

You can do basically any meat and veg except carrots, sweetcorn and peas (too many carbs in these!). No potatoes, rice or pasta. Any sauce, even with cream, as long as it isn't sugary! Then dessert is hard. My dad (been on Atkins for two years now, is incredibly skinny too!!) eats sugar-free jelly mixed with creme fraiche and some fresh fruit. But I think you can only eat fruit after you've been on Atkins for a while, and even then, only berries, really.

Atkins Moussaka!

Take 1lb of minced meat (preferably lamb, but beef will do fine). Brown it in a little olive oil. Add 2 tbsps of red wine, 2 tsps of cinnamon, 2 crushed and chopped cloves of garlic and a beef stock cube (not real stock this time as it's too liquid). Sprinkle in some dried oregano - or fresh if you have it. Cook for a little longer until the alcohol has evaporated, then add a tbsp of tomato puree, and mix well.

Fry two sliced aubergines in olive oil until they start to 'give back' the oil and are nicely browned. Put a layer of meat into a lasagne dish, or similar, top with half the drained aubergine slices, then another layer of meat, then another layer of aubergine.

Separate 3 eggs. Whicsk the whites until they hold soft peaks. Mix the egg yolks with around a handful of grated cheese and about 100ml of double cream, then fold in to the egg whites. Spread this mixture over the meat/aubergines, sprinkle on some grated Parmesan, then cook in a medium oven until risen and browned. Serve with salad leaves. Probably about 4 servings (

Instead of dessert you could do a cheese board.

Thanks for the ideas - Budababe that Moussaka sounds lovely - I'll run that past dh and see what he thinks.

No sugar??? Ho hum, that's most desserts out then! Cheeseboard or fruit salad I suppose.

Budababe - did the moussaka, plus mixed berries for dessert and cheeseboard and it was all a great success! There wasn't a scrap of moussaka left and he said a couple of times how lovely it was! Thank you .
