Salad ideas for work?

Anyone have any salad ideas that I can take to work?

I'm currently cooking a salmon fillet and got some noodles as I was starting to make a salad inspired by one I bought in M&S the other day... hopfully it'll turn out ok...

Any other favourites that will survive public transport and will support my trying to lose weight bid?

I hate tuna but anything else is ok.

Rice and cous cous salads are low fat/calories and easily transportable:

Cooked rice of choice
Black eyed beans (tin)
Sweetcorn
Raw chopped peppers
Raw mushrooms

Chop everything into small chunks, mix together with rice and drained beans and season with lots of S&P

'Cooked' cous cous (nice in stock rather than plain water)
Roasted veg (peppers, courgette, asparagus, cherry toms etc)
All or some chopped herbs: basil, parsley, coriander, mint

Mix everything together

You also can't beat an old fashioned chopped salad with a choice of hard boiled egg/cheese/ham/cold salmon. Chop all salad ingredients and season, add the 'protein' option separately when about to eat.

If I think of any others I'll post x

Any noodle salads are normally good. I would avoid though adding things like salmon as it would smell very intensely. Do you have a fridge where you'll be putting your salad?

Potato salad is also good, olive oil/lemon instead of mayo. You can add things like olives, capers, feta cheese etc.

There's also a nice recipe I made recently for chickpea & feta cheese salad. If you're interested I can give you the recipe.

Thanks for the ideas - would love to try any recipes you have.

There's only one fridge which is nowhere near my desk so won't be using it but then I have very sensitive teeth and can't eat certain things straight from fridge anyway like tomatoes. Will use a cool bag though the one I have is looking a bit manky!

I do a nice big green salad with peppers and add a tin of mackrel or sardines.

I do cous cous with peppers and then add tinned sardines or markrel

reason being they are cheap - 45 p per tin and I can do lunch for the week for around £2.50 and I don't drink milk so get my calcium from the fish
