Guacamole Recipe Please

I keep trying to make guacamole from recipes in cookbooks but it is never quite right.

Does anyone have a tried and tested recipe that they can recommend so I can stop serving shop bought stuff?

I just:

chop a red onion and a couple of green or red chillis and a garlic clove v v finely;
put in a bowl and squeeze with lime juice then lots of black pepper;
add two mashed avocadoes.

Lots of people put tomato in but tthat is revolting!

Oh yes - coriander is v good.

Just an avocado, juice of half a lime, a garlic clove and half a finely chopped chilli plus a little salt and a good grind of black pepper.

This is the best easiest recipe (straight from a great Mexican restaurant)

half a medium red onion finely chopped
3 -4 ripe avocados mashed roughly with a fork
8-10 cherry tomatoes chopped roughly
handful of coriander chopped roughly
2 or 3 good pinches of rock salt
pinch of black pepper
squeeze of lemon or lime to taste

Also top tip - leave one of the avocado stones in the mix and it will not go brown even in the fridge overnight - promise!

Two ripe ( must be ripe ) avocados, crushed garlic to taste, lime zest and juice, very large handful finely chopped coriander, very finely diced red onion, fresh chilli with or without seeds, and if you like shop bought, then a tiny bit of cream makes it richer, more like shop bought, but takes away a little of the zing.

The key, IMO, is that the avocados must be perfectly ripe.

2 mashed avocadoes, half an onion finely chopped, some chilli, garlic (I use the purees of these for ease), lime juice and fresh coriander (a couple of finely chopped cherry tomatoes optional). Ooooh I really want some guacamole now!

Chop white part of a spring onion or two finely. Chop up a couple of slices jalapenos and maybe a small chili pepper (I used jarred). Peel and chop a ripe tomato. Chop a small handful of fresh coriander or use a tsp of dried coriander leaf.

At the last minute, mash two avocados and mix with the rest. Season with salt and a bit of lime juice.

People rave about my guacamole.
