Does anyone have any simple Spanish style meal ideas? We are off to Spain self-catering for a week and I'd like to cook meals in keeping with local culture and ingredients. Also needs to be quick/easy as I don't want to spend all my hols cooking.

You will find a magic ingredient called tomate frito which is tomato cooked with garlic or onion. Either comes in tins or tetra pack.
You can use it for lots but my favourite is lomo (thin pork steaks) , red peppers and paprika with tomate frito. Very fast. Yum!
Also pollo al ajillo - garlic chicken. Chunks of chicken cooked with a tonne of garlic, olive oil and splash of white wine or lemon.
Gambas pil pil - prawns with garlic, paprika and chilli served with crusty bread para mojar (to mop up)
You will find fantastic fresh food.
Also you have to try Cola cao (chocolate powder for milk), Natillas (a vanilla dessert) and Palmeras (pastries). That is an order!

Good chorizo makes any dish brilliant - tortillas (spanish omlette with onion, chorizo and potato), pasta sauces (onion, garlic, grated carrot, peppers,chorizo and a tin of tomatoes), seafood (prawns, mussles etc with chorizo). One put stews with tomatoes, onions, garlic, peppers, chickpeas and chorizo.

KDDD - I have seen "tomate frito" on previous trips and love the sound of the lomo. How would you cook it? Pan fry pork first then add frito and peppers?

Yes just panfry the pork. Lomo is beautiful - also makes lovely sandwiches in a breadstick.
Another good and quick one with tomate frito is maccarones.
Carne picada (mince) with onion, pepper, tomate frito. Mixed with cooked macaroni. Put in an oven proofed dish, covered in white or cheese sauce and grated cheese. Then shoved in the oven. A fast lasagne really!
I have a brilliant book by Karlos Arguinano who is kind of the Spanish Delia. Will see if I can find any translations for you.
