My friend has lent us her breadmaker while she is on holiday. I used her recipe for the first loaf (1 cup brown flour, 1 cup white and 2 cups granary) and it was lovely. I then made one all white flour (for DH's heathen taste buds Smile using the manufacturers recipe but although it was nice, it was rather cake like. Any tips please to make it lighter?

And i thought I'd make another one today with a mixture of white and granary and see if I can make one loaf that we all like. Will I do 2 cups white and 2 cups granary?

Because the first recipe called for 4 cups of flour in total but the second recipe only called for 3 cups, I'm a tad confused about how many to use next Grin. The white brad recipe also had butter in it (just 1 1/2 tablespoons). Shall i use that if i do it half granary??

TIA

are you using strong / bread flour and putting the ingredients in the order of the recipe?

yes kiwibella, I am. I made bagel bread last night - I daren't buy one of these things as I'll put on about 2 stone just from eating extra bread!!
