Hello, I've always been handy in the kitchen as a cook but since falling preg 16 weeks ago I can't bare meat. Ive only managed to cook the odd roast and I don't fancy the meat when it comes.

My dd loves to help bake and cook so I don't want to do micro wave meals etc

Anyway, I have found a love for baking and veg burgers. I don't want to pile the pounds on so does anyone have any healthy veg ideas. Oh and at the moment quorn turns my stomach! I love spicy food and homous? So any recipies like that would be greatly appreciated !

Stuffed Peppers (serves 1)

2 bell peppers, red and yellow are sweetest
1.5oz brown rice
a little oil
2 spring onions, finely chopped
2oz sweetcorn
2oz fine green beans, chopped
1 large tomato, deseeded, skinned & chopped
dash tabasco or chilli sauce
pinch of dried thyme
seasoning
1oz grated cheese

  • Preheat the oven to about 180C
  • Cook the brown rice for the time indicated on the packet. Drain and reserve.
  • Trim the stalks on the peppers and then halve, leaving the stalks intact. Carefully remove the seedy core with a small vegetable knife
  • Place the pepper halves in a microawaveable dish with a spoon of water. Cover with clingfilm and microwave on high for 2 minutes to soften slightly.
  • Mix the rice with all the other ingredients except the cheese. Stuff the peppers with the rice/veggie mixture and place on a baking tray. Any extra mixture can be baked alongside in a ramekin
  • Sprinkle cheese on top and bake for 20-30 minutes until heated through and the cheese bubbling and toasted
(NB... alter the vegetable filling depending on what you have available)

Serve with a salad

Spinach Frittata (serves 1)

2 or 3 eggs
100g fresh leaf spinach, washed and drained
1 tomato, deseeded, skinned and chopped
1 spring onion, chopped
a little oil
Seasoning
1oz grated cheese

  • Heat your grill
  • Beat the eggs and add the tomato, onion and seasoning. Finally, fold in the spinach leaves until well-coated with egg mixture.
  • Heat a little oil in a non-stick omelette pan and tip in the mixture. Cram it down by putting a big pan lid over the top
  • Once the spinach has wilted down and the base has set a little, sprinkle on the cheese and transfer the pan to the grill
  • Cook until the eggs are set and the top is golden

Serve with salad or new potatoes

(NB.. if making this dish for more than one, trade up to a larger frying pan and allow more cooking time. Serve in thick wedges)
