Recipe challenge : 100g desiccated coconut

We are moving soon so i am trying to use up all my odds and ends in the cupboards.

Wondered if anyone could think of a recipe that called for exactly 100g coconut?? As that is all that remains. I've plenty of the other baking essentials to go with this but there isn't enough coconut left to make another batch of what this was originally bought for - my kitsch-ly named Paradise Slice.

Mix it into crumble or rice pudding (goes well with dried apricots in as well)

Closest i could find was this for oaty coconut cookies, maybe just incerease the amounts of the other ignredients and make a couple extra cookies?

Ingredients:

85g porridge oats
85g desicated coconut
100g plain flour
100g caster sugar
100g butter
1 tablespoon golden syrup
1 teaspoon bicarbonate of soda

Instructions:

  1. Preheat the oven to 160C (fan oven) and grease two baking sheets with a little butter.
  2. Place the desicated coconut, porridge oats, flour and caster sugar into a mixing bowl and stir well to combine the ingredients.
  3. Melt the butter in a small pan over a low heat, add the golden syrup and stir well. Add 2 tablespoon of boiling water to the bicarbonate of soda, stir well then add to the butter mixture.
  4. Remove the pan from the heat and pour the contents into the mixing bowl. Stir well until all of the ingredients have combined to a flapjack consistency.
  5. Place spoonfuls of the mixture onto the baking trays (space them apart as they will spread during cooking.
  6. Place in the oven and cook for 10 minutes until the biscuits have flattened and spread and are a golden colour.
  7. Allow to cool on the baking sheets for 5-10 minutes then transfer to a wire rack to cool.

I'd mix it with yoghurt, green chillis and lemon juice to make a gorgeous dip to have with a curry.

Or just mix it into a bowl of fairy cake sponge mix.

Or make banana bread with the coconut chucked in too?
