Bread didn't rise :(

Have Panasonic breadmaker and have used it successfully for about 6 weeks. First disaster yesterday as bread (followed rapid white recipe) was heavy and rose the little it did unevenly. Edible but heavy. Any thoughts as to why ?

Old yeast? Old flour?

I ditched our breadmaker because it either overflowed or made bricks.

nope , same yeast as before, from new sachet, and new flour. Brick is a good description !

Were the paddle and bowl in properly? I had a similar thing the last time I used my Morphy Richards one, because I hadn't twisted the bowl onto it's fixing securely enough and the paddle wasn't going round properly.

I make my bread by hand. I made some yesterday and it also didn't rise properly. My bread always rises so I'm putting it down to sunspots or something [woo]

where do you keep your yeast and what type to you use?

oh ans what type of flour? I have brought new flour and had brick then used another flour and it was ok - it was the new flour that was off - supermarket refund...

Yeast is Allinson Easy Bake and most, if not all, came from a sealed sachet. Breadmaker , flour etc is stored in the utility room, a little cooler than the rest of house atm

I have had bricks from a dodgy bag of flour and old yeast. I buy the Doves yeast in a 99p pack which lasts ages but by the end we need to add a bit more yeast to get a good rise.

I get the doves and keep it in the fridge and it is fine- even after 3 months it is ok, one packet usualy lasts me around 4 months which is a bargin for 99p.

I woudl try again, clean everything out and get new yeast and do a proper program, i think the two hour bread is a bit doughy anyway. do the sandwich loaf

aargh same happened again and I'd made sure the container was secure. Dh is hopefully getting more yeast - maybe the sachet wasn't fully sealad ?

Did you put the salt in? That can cause it not to rise. Also too much water.

I think it is the flour. Did white rolls yesterday with a little more success then a 70% wholemeal loaf today which rose much more. Will buy new white and try again !
