Not exactly a shoestring, but need to rustle up 3 courses for 4 people tomorrow night, I am at work till 4pm so will have 4 hours to shop, prepare and cook plus look after dcs etc.I have £40 in my purse and would like change as that is all i have until monday. Guests will bring wine so need your inspiration for cheap and easy 3 course meal that looks like i have put effort in, without being over the top . help please?

Jacket potatoes or rice with chilli. You could have natchos and dips with it or as the starter.

Ice cream for pud. Hagen daz are bogof in tesco i think or is it sainsburys.

Aldi ice cream looks and tastes dead posh like but is very cheap.
Maybe do a big lasagne? Ingredients for that are cheap enough and it's not hard to do at all.

Are you all foodies or non foodies? How much faff do you like? :)

Starter - Smoked salmon, salad leaves, gravalax sauce (all cold so dead quick)
Main - Chicken stuffed with garlic and herb philly & wrapped in pancetta (or streaky bacon), veggies and new pots
Pud - Banoffee Pie (cheat with a tin of caramel & buy ripe bananas)

That should come in well under £40!
