Green and Yellow pepper side dish?

Two peppers left in the fridge. I am not a massive fan of peppers (so why did I buy them you ask, good question)!

Anyway, they are there and as I don't like them I don't really know how to cook them other than as an addition chopped to say a stew or a stir fry.

I am cooking this this evening so just a simple side dish to go with....

Chicken sounds yum....but can't think of a side dish for green/yellow peppers (a pepperonata type thing, but I think that'd be nicest with red as well). I use up the green and yellow ones in faijtas (or Curry).

Do you have any other veg? courgettes etc? i would just pop them in oven with a drizzle of olive oil and roast them so they get that charred taste mmm.

If you slice them they should take same amount of time as your chicken!

So, just sliced, deseeded and oiled on a tray in the oven? I have a bit of rosemary and thyme, or maybe chilli??? Or just plain is best?

Do they taste different from red particularly?

Happy to give that a go - and no, sadly, not much else, except carrots and greens until I restock tomorrow.

green definately has a stronger taste imo, yellow is always sweeter.

or you could skip the herby chicken and make fajitas...

Ah, I had a change of heart.

Peppers tomorrow, with caribbean pork and rice and peas, a much better fit!
