Grated parmesan in a packet - how long will it keep?

Have a packet of grated parmesan in the fridge that was first opened about two weeks ago. The use by date on the front say 5/03/11, but consume within 3 days of opening. It has been sealed since it was opened. Would it still be ok to use or will have to buy some more for my risotto tonight?

I'd say the simple question is "Does it look mouldy?" If not, I'm sure it's fine! This 3 days after opening is to cover their backs because they don't have any idea how you have stored it.

I've used a month after opening before, throw it out if there's any green bits.

Just thought I'd mention in case you are worried about parmesan the following: My mother used to buy parmesan in a block and grate herself she would then put in freezer bags and freeze. When we had pasta the frozen bag would be put on the table for us to scrape a serving of parmesan and then returned to the freezer.
